Ingredients

butter 200 g
granulated sugar 1 st
eggs 2 pcs
wheat flour 1 st
dry biscuit crackers 1 st
chopped almonds 1 st
low fat cream 0.5 st
cinnamon 1 tsp
cardamom 1 tsp
baking powder 1 tsp
impregnation
water 1 st
rum or almond liqueur 2-3 st. l.
glaze
powdered sugar 0.5 st
lemon juice 2 tsp

Cooking method

    Runebergin TortustaThen crackers, almonds and spices. We knead. This will make a pretty thick dough.

    Runebergin TortustaUsually cakes are baked in the form of straight columns (diameter 5cm, height 6cm). I wanted to bake them of exactly this size, so I adapted the Tyoma baby food jars for the molds. Grease the molds with oil and sprinkle with breadcrumbs. Fill the forms with dough, leaving 1-2 cm on top, this is how the cakes rise when baking. We bake in an oven preheated to 180 C for about 15 minutes.
    Pour the impregnation into a small container that can hold one cake.
  • While the cakes are hot very quickly, literally instantly, dip them into the rum liquid, and then put them in an airtight container so that the cakes do not dry out and retain moisture. After they have cooled down, you can decorate them. Place a little raspberry jam on top of each cake and circle it with a frosting ring.Runebergin Tortusta

Johan Ludwig Runeberg - Finnish poet was born on February 5, 1804. Every year, two weeks before the next anniversary of the poet's birthday, cakes bearing his name begin to appear on the shelves of Finnish stores. They are sold until early February and then disappear until next year. The rest of the time, you can sometimes stumble upon them in some restaurants and cafes.
There are many recipes for Runeberg pastries, all are considered old and authentic. There are not many less instructions for cooking - each chef claims that it is he who makes Runeberg's cakes in accordance with the classical tradition adopted during the time of the famous poet and his no less famous wife.
It is guaranteed that you can taste this dessert at any time of the year only in one place - in Porvoo, in a cafe near the poet's house, where his museum is now located. Plus, Runeberg's cake is certainly real!
