Cooking method

  • chop the almonds into crumbs with knives in a food processor. here it is, happiness - for this recipe, the almonds can not be peeled) add chilled chocolate there, scroll with knives until fine crumbs. add essences and pour in protein, scroll again until smooth.
  • I ground almonds in a blender, there is also chocolate, but the protein did not work in the same place - it grabs into a lump and knives are not kneaded. you can pour the ground almonds and chocolate into a bowl and stir in the protein with a spoon.
  • Cover the baking sheet with baking paper.
  • the filling can be divided into 20 pieces of 14 g each, of course, by eye .. but for people like me - who like it to be equal for everyone) - I share Luda's way mariana_aga
  • put a bowl with filling on the scales, zero the scales and pinch off a piece. then either pinch off a little more, or return the excess to the bowl - on the scales it should be -14g again, reset to zero and repeat 20 times))

  • much faster if you pinch all the pieces first, and then roll them into balls.
  • get the dough out of the refrigerator. put on the scales, set to zero, cut off a piece of 14g from the dough, knead it into a cake in your fingers. if it sticks, sprinkle with powdered sugar. then we hug a truffle ball with a flat cake, roll it into a ball in our hands and put it on a covered baking sheet. if something is not clear - here is the video
