Ingredients

yeast puff pastry 600 g
large apples 1.5 pcs
cinnamon taste
sugar taste
fill:
sour cream 20% 350 g
sugar 4 tbsp. l. with a middle slide
vanillin 1 sachet
eggs 3 large
starch 3 tbsp. l. with a small slide

Cooking method

  • 1) Defrost the dough and cut into small rectangles.
  • (I buy dough "Morozko", packaged in 2 layers per package, weighing 400 g, 1 package).
  • 8 rectangles are obtained from each dough plate. That is, the whole cake requires 3 plates of dough.
  • 2) Put the dough in a baking dish at a short distance from each other.
  • Important! The form must be non-stick and deep! Otherwise, the filling has every chance of sticking to the mold and taking out the cake whole will not work. And, also, the filling runs the risk of spilling over the sides of the mold during baking.

  • 3) Peel the apples from seed pods and skins and cut them into thin slices, about 3 mm thick. And then we put them on the dough plates. Sprinkle with sugar and cinnamon to taste.
  • It is better to take sour apples. So they will play brighter in the pie.

  • 4) We make 3 layers of dough layers and 2 - apples in the cake. The top layer is dough.
  • Cover the dish with a towel and leave to rise for about 50 minutes.
  • If you put it on the table, then the cake will turn out like in my photo.
  • If the proofing is carried out in the oven at a temperature of 35-40 degrees, then the cake will become fluffy and will not fall off, as, indeed, all yeast cakes.
  • 5) When the time is up, we make the fill, whipping together all its components. And fill the future pie with it.
  • 6) We heat the oven to 190 degrees and put the cake pan in it for 40 minutes.
  • 7) After 40 minutes, turn off the oven and slightly open the door no more than 5 cm.
  • 8. When the temperature in the oven drops to 100 degrees, close the oven carefully, trying not to knock, and leave the pie to cool in it.
  • These tricks with the oven are required so that our cake does not collapse from the temperature difference between the oven and the room.
  • Although, for me, all the same, for the most part, the cake sags. But, not as brutal as if I took it out right away.
  • Well, and then, when the temperatures of the oven and kitchen are equal and the caisson no longer threatens our pie, we take out the pie on a suitable stand.
