Paprikashka

Ingredients

lard with a meat layer, with a skin (or brisket) 800 g
salt 200 g
garlic 13 teeth
ground paprika 2 tbsp. l
freshly ground black pepper taste
onion 1-2 pcs
allspice 5-6 pcs
water 2 liters

Cooking method

  • 1PaprikashkaWash and dry the meat.
  • Peel 8-9 cloves of garlic. Measure out 40 grams of salt.
  • 2PaprikashkaPass the garlic through a press.
  • 3PaprikashkaRub the meat with salt and garlic gruel on all sides.
  • 4PaprikashkaWrap tightly in plastic wrap and refrigerate for 36 hours.
  • 5PaprikashkaBoil water with the remaining salt (160 grams), onions, allspice and garlic crushed with a knife.
  • 6PaprikashkaAdd the meat after removing the foil.
  • Bring to a boil and simmer over low heat for 40 minutes.
  • 7PaprikashkaRemove from heat and cool the meat without removing it from the broth.
  • 8PaprikashkaRemove meat from broth, pat dry with paper towels.
  • 9PaprikashkaRub on all sides with freshly ground black pepper and ground paprika.
  • 10PaprikashkaWrap tightly in foil and refrigerate to ripen for 12 hours.
