Ingredients

Psh sourdough. 100% hydration 200 BC
Water 150 ml.
Sugar 140 g
Flour 550-600 g.
Eggs in dough 1 yolk, 2 squirrels

Almond essence a few drops
Salt 1 tsp

Cooking method

  • Knead a fairly dense dough from the ingredients.
  • Put for fermentation in a stably warm place (I put it in a multicooker on the "Dough" mode)
  • When the process is clearly over (the volume of the dough has been increased by at least two times), form two long loaves and place them on a baking sheet covered with a non-stick or silicone mat.
  • Cover with foil (I put the baking sheet in a large plastic bag) and leave to proof until the volume increases by 1.5-2 times. Preheat the oven to 190 * C.
  • This time we grease the blanks with whipped yolk. We bake for 25-30 minutes (depending on the oven). Now we cool our rusks on the wire rack.
  • When the bars have cooled down (as it should, so that you can cut them), cut into pieces, 1-1.5 cm thick.Place on a dry baking sheet and put in an oven preheated to 180 * C.
  • The essence does not last long. You need to brown on both sides.
  • We put the croutons in a large dish and wait for them to cool.
