Beet kvass with sourdough

Ingredients

Beetroot (large) 1 PC.
Water 2 p.
Sugar 4 tbsp. l.
Rye sourdough 1 tbsp. l.

Cooking method

  • Wash and peel the beets. Grate on a coarse grater. Place in a jar.
  • Pour 2 liters of warm water. Add sugar. Pour in, through a sieve, diluted in a small amount of water, the leaven. Stir. Cover with gauze.
  • As soon as the foam cap appears, you can immediately filter it and put it in the refrigerator.
  • The drink is delicious, vigorous. But every day the sweetness will go away.
  • Therefore, we drink quickly))))

Note

The fermentation process depends on the strength of the starter culture and the ambient temperature. It takes me 8-10 hours.

Everything is fine, BUT ..... the pathogenic microflora grows there faster than the kvass is ready. Therefore, I ferment with a useful product. Everything is quickly fermented.

I read the forums - many write that you can fill it up again.
On my own behalf, if the beets have a rich color and the pulp after fermentation is quite bright for itself, then you definitely need to use it again. And if the beets were initially not very dark, then there is nothing to fill in. IMHO.

Once in my childhood I drank such self-brew (my mother fermented from bread kvass) at neighbors (at one time, for a long time, it was fashionable to make beet kvass) - they barely pumped it out, such poisoning was gushing from all the holes

I do this - Tru the beets, put them in 3 l. jar. I fill it with warm water, pour sand there, pour in the leaven dissolved in water. I mix everything well, cover with a sieve lid and leave.stir periodically. And when the foam appears, then through the same sieve cover I pour the kvass into a 2-liter jar and put it in the refrigerator. I take the sourdough directly from the refrigerator.
