Tender fish dumplings

Ingredients

fish fillet (chum salmon, pink salmon, cod, sturgeon) 1.5KG
onion - turnip 2 large
parsley (cilantro) taste
unsalted pork lard 400 g
garlic 5-6 pts. large teeth
salt taste
black pepper taste
dough:
flour 670 - 680 g
eggs 90 gr (1.5 pcs)
vegetable oil 90 ml
hot water 260 ml
salt pinch

Cooking method

  • 1. Cut the onion into large slices and pour boiling water over it for about 20 minutes.
  • 2. Finely chop the parsley or cilantro (or a mixture of herbs).
  • 3. Twist the fish fillet with bacon, onion and garlic through a meat grinder.
  • 4. Mix the minced meat with herbs, salt and pepper.
  • Our minced meat is ready.
  • We prepare the dough and you can start sculpting dumplings.
  • Boil dumplings, if they are freshly prepared, should be no more than 5 minutes after boiling. If the dumplings were frozen, then boil for about 8 to 10 minutes, depending on the size.
  • I cook them by adding a small leaf of lavrushka and 5-6 pieces of black pepper - peas to the water.
