  • We take fresh cucumbers, young, so that the seeds are small and soft.

I used it with my own cottage cheese. I thought that an orange would fit well with cocoa. Cucumber jam with lemon and mint


Source: magazine "Gastronom" (07,2010). Author Julia Nekorkina.

What do you need:

1 kg. cucumbers

600 gr. Sahara

juice and zest of 2 lemons

a small bunch of mint

What to do:

Chop the mint.

Peel the cucumbers, cut in half lengthwise and remove the seeds with a spoon.

Cut the pulp into thin slices, transfer to a saucepan with a thick bottom, add mint, sugar, zest and lemon juice. Leave on for 2-3 hours.

Then bring to a boil over medium heat and simmer until the jam is caramelized, about 30 minutes.

Transfer the jam to jars with sealed lids, close and sterilize for 20 minutes.

This jam is well served with blue and aged hard cheeses.
