Cooking method

  • There are a lot of jam recipes. Perhaps this recipe has long been familiar. But, suddenly, someone wants to drink tea with an unusual dessert? Now is the time for my beloved white lily (Candida) to bloom
  • It has such a strong smell that it is impossible to put bouquets. And on a flowerbed, one flowering plant is enough for the scent to fill the entire garden.
  • And here at my beloved mother-in-law, the lily spread to the whole flower bed and I managed to collect petals for my favorite jam from childhood.

  • The petals are light. From the amount presented in the recipe, you will get exactly a 500 gram jar of the finished product.
  • It is easy to pick off the petals, the anthers, of course, will "stain" them with bright pollen a little, but I don't wash the petals. It seems to me that a little pollen with jam will not hurt. But, pistils and stamens do not go into jam.
  • Without waiting for the petals to wither, you can immediately twist them into snail rolls and string them on a thread. It's not obligatory. I cooked both from whole petals and from cut into pieces. But, with snails, the jam is more beautiful.

  • Then these "beads" should be placed in a heat-resistant container and filled with almost boiling water. They will immediately "sit down". Put on high heat and let it boil (do not boil!)

  • Gently remove the blanched petals with a slotted spoon (or by a string, which is much more convenient) on a separate dish, and after blanching, boil the syrup from the entire amount of sugar in water. As soon as the syrup becomes transparent, place our fragrant "beads" in it and cook after boiling over low heat until tender (in one step). This amount will cook in about 20 minutes.
  • At the very end, add quite a bit of citric acid. I write "to taste", because someone loves sourness, and someone does not.
  • I add at the tip of a teaspoon.
  • Well, and a leaf of room pellargonium, as the final touch. I have a garden geranium. Put it down. They have the same smell.
  • Who decides to replace with vanilla, I warn you - lily does not match with it! Better, in general, without aromatic additives, if you don’t want geranium or you cannot.
  • When the jam is ready, you need to carefully pull out the thread. This is a simple procedure, but be careful not to burn yourself!
  • Pour hot into a jar prepared in advance and seal.

  • Jam, of course, not for everybody. The spouse says that perfume is not eaten! And me and my friends like it.

Zeamays, have not tried. I have no other white lilies. And those that are, without a scent. Especially for cutting these planted. This was my grandmother's. We made jam from it. And when the house fell under demolition, I took from there two peony bushes and this lily. So they move with me.
A light smell and a fairly strong taste remain in the jam. The consistency is honey.
