Ingredients

Carrot 1 PC
Bulb onions 2 pcs
Sweet red pepper 1 PC
Green onion 5 pieces
Cilantro / Parsley Taste
Hot pepper Taste
Ground coriander 1 tbsp. l
Laurel, peppercorns
Vegetable oil for frying
Garlic 5 teeth

Cooking method

  • In boiling salted water, let the eggplants cut along one side for 5-7 minutes until the skin color changes (do not overcook!). We take it out on a wide flat plate, cover it with a plate on top and put the load. Let the excess liquid drain
  • Marinated stuffed eggplants
  • Cut carrots and peppers into strips, dice onions or whatever you like.
  • Pour the onion into the heated oil and fry for a couple of minutes until golden brown, add a tablespoon of ground coriander and fry for another minute until a delicious smell of fried spices appears, add garlic and pepper. Another couple of minutes, add carrots, chopped greens, hot pepper, mix and immediately turn off the pan.

  • For 4 eggplants, I prepared a marinade for 1.5 liters of water (1.5 tablespoons of salt, 4 sugar, 4 tablespoons of apple vinegar, laurel, mustard seed, peppercorns)
  • We fill the eggplants with our filling, put them in a container where they will "live" (I have a bowl of tapervea with a lid) and fill them with boiling marinade.
  • Marinated stuffed eggplants
  • For a week this bowl lives on the table or on the window. Then we put it in the refrigerator (if there is WHAT left to remove)
