Smoked pork neck in a smokehouse with a water seal

Ingredients

Pork neck
Salt (for 1 liter of water) 90 g
Mix of herbs, pepper, bay leaf

Cooking method

  • My beloved breadwinner Timon had a nice hunt yesterday in the butcher's shop. He brought me a hefty piece of pork neck, weighing as much as 4.5 kg. I had no doubts about how to deal with her - of course, smoke!
  • Since this "log" refused to fit even into an eleven-liter salting pan, and it would hardly fit into the smokehouse, I had to "cut" it in two.
  • The brine was made not quite standard (for 1 liter of water - 100 g of salt), and, being afraid to oversalt (after all, this is open meat, unlike, say, the shank, which is covered with a skin), I slightly reduced the salt concentration - to 90 grams per liter ...
  • Usually the brine is prepared like this: the right amount of water is taken (this time it took me as much as 5 liters), different herbs are added to it (I put dried dill with parsley), coarsely ground or any other pepper (maybe even hot) and bay leaf ... Per liter of brine goes: 1 tsp. herbs, 1/4 part tsp. pepper and 2 leaves of lavrushka. Then the whole thing is boiled for five minutes and cooled to cold.
  • I make it easier: I take half a liter from the already measured amount of water and put it on fire in a ladle. I put everything that I listed above in there, and boil it, and then pour it into a saucepan with water, into which salt has already been mixed. Everything, the brine is ready.
  • We run pieces of the neck into it and leave for 8-10 hours (depending on the thickness of the meat). You can even leave it in the refrigerator if the brine is cold enough.
  • I salted the neck for 9 hours, then I took it out, put it on the wire rack and let it dry properly for two or three hours (I don't remember exactly - I was busy ... I don't remember what either).
  • Here it is, or rather, they are:

  • You know, after salting and "drying" the meat soooo deliciously smelled of salted bacon, just cut it off and eat it!
  • Half an hour before the smoking action, I took two handfuls of alder chips and soaked them in water (to speed up the soaking process, you can pour boiling water over the chips, then it will be ready in fifteen minutes).
  • In the meantime, I prepared a smokehouse (you can see how this is done in a special topic, a link to which I will give in a note. Hospad, I shouldn't forget ...)
  • Every time I shove something very "dimensional" into the smokehouse, I thank God for giving me brains - to choose a large smokehouse, otherwise nothing would fit into it. And so - right next to it:

  • Sprinkled on top of the neck with ground black pepper, I really wanted to enhance the aroma.
  • She closed the smokehouse, attached a silicone hose (which my beloved Manka Shumakherova, for my beloved, stole from Sklif), brought its other end into the hood, and poured water into the smokehouse's water seal. Here's the construction:

  • Then she turned on a big fire and noted the time - 10 minutes. During this time, the smokehouse is perfectly heated. Then she turned down the fire to medium and from time to time watched the smoke coming out of the hose (you need it not to be too intense, but not completely disappear - I regulate this with fire).
  • Timed the time - 1.5 hours. Then she turned off the heat and let the smokehouse stand for another 1 hour, without opening the lid.
  • All! I wrote for a longer time, I don't know why ... I missed it, probably - I haven't had recipes for a long time.
  • So, having somehow withstood the time set for the meat to rest, we open the smokehouse and see two such savory little things (both did not fit into the frame at once):

  • One piece immediately went into slicing (I really wanted to eat). The juice ran from him in three streams:

  • And the second one was laid out on a board, where, when cooled, it acquired an even more luxurious color:

  • Well, that's all.
  • It remains only to add that the smoked neck is amazingly tasty not only hot, but also cold. And despite the fact that there was very little fat in it, it turned out not at all lean and not dry. I can't even say which one I liked better - just cooked or cooled.
  • In my opinion, the meat turned out to be just perfect! And it salted in moderation, and the consistency is tender, but keeping its shape ... Oh, just imagine: a slice of smoked meat, with garlic rolls and with slightly pickled tomatoes and dill ... mmm ... - not food, but pure treasure!
