Bread Smile Goth (with activated carbon)

Ingredients

active wheat sourdough 100% moisture 120 grams
wheat flour / grade 400 gram
water 250 grams
maltodextrin (sugar, molasses, honey) 10 grams
salt 8.5 grams
activated carbon 5-6 grams

Cooking method

  • Feed the sourdough 6-8 hours the day before.
  • Crush the coal in a mortar into dust or grind it in a coffee grinder. If you grind in a grinder, do not open it immediately. Let the dust settle.
  • Mix the starter culture, water, flour. Cover and leave for 1 hour.
  • Add charcoal, maltodextrin (sugar, molasses, honey) and salt.
  • Knead the dough with a hook for 8-10 minutes.
  • Bread Smile Goth (with activated carbon) The dough is moist, sticky, silky, but completely wrapped around the hook and does not stick to the bowl.
  • Leave on for 180 minutes. Stretch-fold after 60 and 120 minutes.

  • Form bread of any shape.
  • It is very good to sprinkle it with flour.
  • Place in a basket with a linen towel, which is also floured, seam up. Put in a bag, tie and refrigerate for 12 hours.

  • Leave in a warm place (25-27 degrees) for 1.5 hours.
  • Turn over onto paper, make cuts.
  • Bake on a stone under a hood at a temperature of 240-250 degrees for the first 15 minutes.
  • We remove the cap, reduce the temperature to 180 degrees and bake until cooked for another 20 minutes.
  • We take it out, let it cool, cut it, shock our loved ones and eat it.

I just decided to show that bread is baked in the world. It's up to you. Everyone has the right to eat meat or not, use nitrite salt or not, salt or not salt at all, take certain drugs or not, warm honey or not, drink tea with sugar or not, put bran or not, sit on a diet and what kind or not. That is why we and humans, thinking creatures, to decide for ourselves.
In this bread, charcoal is used as a coloring agent. You can completely bake bread according to this recipe without adding it. You will get a very tasty, aromatic sourdough bread. There is no foreign taste or smell in such bread from coal, unlike the test tinted with cuttlefish ink.
