Bread 4 rolls

Ingredients

Light dough:
Wheat sourdough 100% 200 BC
Wheat flour 400 BC
Salt 7 g
Sugar 40 g
Ghee butter 35 g
Milk 100 ml.
Water 80 ml.
DARK DOUGH:
Wheat sourdough 100% 200 BC
Wheat flour 400 BC
Salt 7 g
Sugar 40 g
Vegetable oil 2 tbsp. l.
Milk 100 ml.
Water 80 ml.
Cocoa 1 tbsp. l.

Cooking method

  • Knead the koloboks separately.
  • Ferment them separately in a warm place for 2 hours.
  • After the lapse of time, divide each kolobok into 4 parts.
  • Stretch each part gently with your hands (do not use the rolling pin, so as not to disturb the bubble structure of the dough) Combine two, of different colors. Roll into rolls.
  • Place in a greased mold.
  • Allow to distance 60-90 minutes.
  • Baked in a bread maker for 1 hour. 20 minutes. (I have HP Brand 3801)
  • Bread 4 rolls

Note

The crumb of the bread is porous, light, not crumbly.

Very interesting. How to collect? Stretch one white, add a stretched dark-roll, two others as well, and then connect in a shape. Or stretch all four, stack on top of each other and roll? A beautiful cut is simple.

Yesterday I baked bread according to this recipe. I just decided to mold it differently. I divided both koloboks in half, for two "brick" bread molds. In one I made two rolls - one white on top, dark inside, the other vice versa and laid them side by side in a mold.
In another I rolled balls and three divided koloboks (8 white and 8 dark). I put them in a shape in two tiers, in a checkerboard pattern.
The loaves rose very high. The bread turned out to be smart.
