Ingredients

Wheat flour 2 stacks of flour (300g)
Sugar 3/4 cup
Soda 3/4 tsp
Salt 1/2 tsp
Bananas 3 pcs. (1.5 cups-300 gr.)
Melted butter 6 tbsp. l. (95 gr.)
Eggs 2 pcs. large
Yogurt 1/4 cup
Vanilla extract 1 tsp
Walnuts 1 1/4 cups

Cooking method

  • Combine flour, sugar, baking soda and salt.
  • Mash the bananas with a pusher and mix with melted butter, eggs, yogurt and vanilla extract. Instead of vanilla extract, you can take a packet of vanilla sugar or 0.5g. vanillin.
  • Coarsely chop 1 cup of nuts and crush 1/4 cup into powder.
  • Preheat oven to 350F (I found I can bake better at 400F), Oil the cake pan. The authors recommend a 9x5x3 inch shape, but this makes the cupcake squat. So I prefer 8x4 inches.
  • Pour the liquid mixture into the dry mixture, add the nuts and gently mix everything with a spatula. Do not knead until smooth. The main thing is that the flour is moistened for the most part and that's it. The mass will be thick, lumpy.
  • Put the dough into a mold and bake. The authors recommend an oven for 50 minutes. I get a better oven for 1 hour and 20 minutes, but I have a form with two-layer walls, that is, everything heats up in it longer.
  • In any case, use a tester or wooden stick to check if the cake is ready. The cake tester is a thermometer needle, the tip of which will change color (turn red) when the cake is ready.
  • Options:
  • Chocolate banana muffin
  • Add 70 g of grated chocolate to the flour. Delicious. Strongly cheers up :)
  • Spicy banana muffin.
  • Add 2 tbsp to the flour. l. orange peel, 1 tsp. cinnamon and 1/4 tsp. flour nut. Such a cake turns out to be so spicy, it smells and tastes like a gingerbread or gingerbread. If you grind all the walnuts into powder, then this cupcake will simply not be distinguished from the gingerbread! The banana flavor gets completely clogged. But still tasty.
  • Banana muffin with coconut and macadamia nuts
  • Instead of walnuts, use 1 cup chopped macadamia nuts and 1/2 cup sweetened coconut flakes. Toast the coconut and macadamia nut mixture in the oven on a baking sheet at 350F until golden brown, for 6 minutes, stirring every 2 minutes.
  • It turns out an exceptionally rich muffin, tropical in character.

Krosh, and if done in HP, it is better to just bake or you can knead in HP ??? I just have never baked cupcakes in KhP, so I don't know if it is possible to knead them there.

Unfortunately, I am not familiar with the "Cupcake" mode in your HP ...In my HP the Keks program includes kneading + baking. If your HP has a Keks program, then you can knead and bake in the same place, I usually do this, but as for this particular cupcake, I would still advise you to knead by hand. The dough is kneaded in a matter of minutes, the main thing is not to be zealous when mixing the ingredients after adding flour, otherwise the result will be. Flour was poured, a few movements with a spoon (though I myself always use a silicone spatula, it's more convenient for me) and put it on the baking.

It is easy to change yogurt for sour cream, the taste will be even richer. The amount of sour cream is equal to the amount of yogurt.

it turned out that in my HP there are a bunch of modes that I had not used at all in two years and did not even know why they were needed. and one of these modes is KEKS.
I thought that I would try to bake on the SWEET BREAD mode, but as it turned out, it does not work at all.

SWEET BREAD for yeast sweets, CAPE - for muffins. my KEKS regimen has only 7 minutes of kneading time. Remembering your recommendations about "not being zealous" with the kneading, I realized that 7 minutes of kneading is the most it.

I measured it on a measuring glass for liquid + on a scale. if 150 grams of flour is one glass, then the recipe is talking about a glass of 250 ml. and I ended up with the following:
- bananas 3 pcs. = 300 gr.
- butter 95 gr. (melted in AG)
- eggs 2 pcs.
- sour cream 65 ml = 70 gr.
- flour 300 gr.
- sugar 195 ml = 170 gr.
- soda ¾ tsp.
- salt ½ tsp.
- vanillin ½ sachet

maybe I counted something wrong, because the cupcake did not rise ???

For my taste - any cupcakes are best in the oven, then in a slow cooker and only in third place in a bread maker. That is why I only have a tea bake in the bread maker, it is not high anyway.

7 minutes for the cake to knead is too much. One or two minutes, no more. And if with your hands, then it is better to knock the proteins separately, and everything else just quickly mix and then gently stir in the proteins. In the bread maker, you can turn on the Dough mode and turn off after 2 minutes, and then turn on the Baking.

Well ... cut it up and taste it. Very, very!
I added some coconut flakes. Walnuts. I'll be bolder next time! I'll add more nuts and raisins.
I liked the cupcake very much. Moist and delicate.
I had 3 very ripe large bananas. Already black, but the pulp could have been even more ripe, delicious!
