Ingredients

wheat flour 500 g
wheat leaven 200 g
warm milk or whey 200 ml
sugar 1 tbsp. the spoon
salt 1 tea the spoon
vegetable oil 2 tbsp. spoons

Cooking method

  • I add sugar, salt and soda to the flour (soda is needed to remove the sour taste from the sourdough in the finished bread), rub in vegetable oil and add sourdough and warm non-acid whey or milk (I like the structure of whey-based bread better). Knead until a steep, homogeneous, very elastic dough is formed. I knead with a mixer with dough attachments for 8-10 minutes. Then I cover the dough with a bag and leave for 30 minutes.
  • Then I spread the dough on the table and use my hands to form a loaf "from the edges to the middle." I put the finished bun in a baking dish, greased with vegetable oil (I have a round Teflon one with high sides), cover it with a bag and put it in a warm place until it more than doubles in volume.
  • I preheat the oven to a maximum of 15 minutes. Immediately put the water pan down so that it also gets hot. Before sending the bread to the oven, I grease it with water on top and make 1 cm deep cuts with a sharp knife.Put the bread on the oven shelf and immediately pour it into the pan about a glass of water (you need to do this carefully so as not to scald with steam - I use a ladle with a long handle). Baking mode (for electric oven with convection) - 10 min. 225 C, then I take out the pan with water, lower it to 150 C, after another 15 minutes - to 125 C and leave it for another 15-20 minutes. After removing from the oven for 5 minutes. I leave the bread in the form and spread it to cool.

Lactic acid sourdough (from Admin - there is a topic on it, in the Sourdough section, where I learned how to make it, for which Admin thanks a lot!) On white flour - overfed from rye, only I stand not for 3 days, but for 2 days - I feed in the morning of the first day and in the morning and in the evening of the second, and on the third I use it so that there is less acidity in the bread, because in our family we like white bread without sourness
