Cottage cheese-pumpkin millet with dried cranberries

Ingredients

Millet 100 g
Frozen pumpkin 200 gr.
Millet boiling water 360 gr.
Coarse sea salt 0.5 tsp
Dried cranberries 100 g
Curd (fatty, not watery) 200 gr.
Sugar 7 tsp
Invert syrup (or honey) 1 tbsp. l.
Egg C-1 2 pcs.
Baking powder 1 tsp
Vegetable oil 15 gr.
Flour / s 150 gr.
Vanillin

Cooking method

  • Rinse millet well and soak in cold water for 3 hours. Drain the water. Cover with water for boiling. Salt. Boil. Reduce the heat and cook for 10 minutes. Turn off the fire. Leave to infuse. The water should be completely absorbed. Drain off unabsorbed water.
  • Rinse the cranberries well. Add sugar, vanillin, cranberries to the porridge. Mix. Do not whisk! Leave to cool completely.
  • Do not defrost the pumpkin. Place in a microwave safe dish. Power 800 time 5 minutes. Check readiness. Cool down.
  • Beat eggs separately.
  • Grind cottage cheese (do not beat, but grind) with invert syrup, butter, pumpkin and eggs. Add porridge, flour and baking powder. Mix. The dough is not very thick. Flour can be replaced with semolina, but then let stand for 20-30 minutes.
  • Preheat the oven to 180 degrees. It is baked for over an hour. Do not remove from the mold until it has cooled completely.
  • I used to bake in a large glass pan and silicone tins for thick waffles. I liked the waffles better. Only remove carefully.
