Lyagan at Ivanich's, judging by the drawing, is Rishtan. Practically only Rishtan ceramics are brought to Russia. I just haven't tried the ceramics of other cities of Uzbekistan, but I'm almost sure that the clay is similar, fragile.

Therefore, the fat freezes rather quickly, and for this reason I put a small dish on the table, about 25 cm in diameter, quite enough, according to the principle of dismantling - I serve a new portion of hot pilaf. I even preheat the dish. I just love hot pilaf!

The concepts of large and small lyagan are very conditional: 22-24 cm is the size of an ordinary flat plate, although in my ceremonial service the size of a plate is 29 cm (closer to a small dish) !!! By the way, it is convenient to serve fish in whole portions ...
And those who "big, but yesterday" can be made in different sizes and 35, 40, and 45 cm and even more, although there are no exact standards for sizes, not necessarily a multiple of 5 cm.
In short, big-small is subjective. Choose the size according to your "taste".
