Almond-lemon cake with polenta (corn flour or cereal)

Almond-lemon muffin with polenta (corn flour or cereal)

Ingredients

Egg C-1 3 pcs.
Sugar 170 g
Butter (margarine) soft 200 gr.
Lemon (not small) 1 PC.
Almond 200 gr.
Rice flour 100 g
Polenta (can be substituted with cornmeal) 100 g
Baking powder 11 gr. or 1.5 tsp.

Cooking method

  • First of all, knead the soft butter with sugar.
  • Then stir in the eggs one at a time. Add the zest and lemon juice.
  • Grind almonds into small ones !!! crumb with a blender, practically into dust.
  • Add almonds to the egg-oil mixture, sift the rice flour, add polenta. Set the dough to stand for 30 minutes, so that the polenta swells.
  • If you are using corn flour, then you don't need to. Instead of polenta or cornmeal, you can use corn grits that have been ground in a coffee grinder. In this case, also let the dough stand.

  • Add baking powder before baking. Stir without fanaticism and bake in an oven preheated to 180 degrees for 30 minutes. If after the time the cake is not ready, then reduce the temperature to 160 and bake until tender.
  • Almond-lemon muffin with polenta (corn flour or cereal)
  • Cool the cake in the pan. Serve sprinkled with icing sugar, sour cream or whipped cream, ice cream.

Nice recipe, but a little damp. Therefore, we need to change a little.
The cake is very tasty: the crust is crispy, the crumb is tender, grainy-crumbly.
