Ingredients

For the test:
Flour / s 600 gr.
Liquid (water, milk, whey) cold 1 cup (250 ml)
Margarine (butter) soft 100 g
Egg C-1 (medium) 2 pcs.
Baking soda 1/2 tsp
Salt 0.5 tsp
For minced meat:
Meat pulp (I have a pork shoulder) 350 gr.
Raw potatoes 350 gr.
Bulb onions 350 gr.
Salt and spices to taste
Broth (always tasty - salted with spices) 1 glass
Boiling water teapot
Butter
Yolk for lubrication

Cooking method

  • Dough preparation:
  • I cooked in KhP on the program "Dumplings dough". She poured liquid, added an egg and salt mixed in a mug. Then she sifted flour into a bucket. Included HP. When the dough is mixed enough (the crumb is thick), I added the margarine pieces. I added soda before the end of the program. Echpochmak (another option)
  • I put the dough in a bag and put it in the refrigerator.

  • Preparation of the filling:
  • First, I chopped the meat finely. Pieces of about 0.5 to 0.5. You can also 1 * 1, but I make pies both large and small for children. She sprinkled the sliced ​​meat with salt and spices, covered it with a saucer and put it in the refrigerator.
  • Let's take a bow. Crumble it the same size. We put the onion in the refrigerator.
  • Now we put the kettle of water to boil. We need hot boiling water to scald the potatoes. Then it will not turn black in the filling and will not be hard when cooking echpochmak. We put boiled water next to it. We take a larger colander. Chop potatoes of the same size as onions, meat.
  • Echpochmak (another option)
  • Crumble the potatoes gradually, about 1/3 of the total, and put them in a colander in one layer. First rinse the potatoes under running water to rinse off the starch. Then pour boiling water over well. Shake off the water, put it on a plate. Lay out 1/3 of the onion we have prepared on top. Mix the onion with the potatoes by hand. Then again chop the potatoes, rinse, scald, put on the onion + potatoes, a portion of the onion on top. And again, the third and last part.

  • Why such difficulties? All the same ... the potatoes will not darken and crunch in the filling.
  • Mix the vegetables by hand, send them to the meat. Stir the filling well, adding a little broth.
  • Forming:
  • Remove the dough from the refrigerator. The consistency is pleasant for molding. Flour for dusting is practically not required.
  • Echpochmak (another option)
  • Roll out a layer about 0.8 cm thick. Cut out circles the size of a small saucer. Here are my cuttings.

  • Put the filling in the middle of the circle Echpochmak (another option), put a small piece of butter on top and fasten it with a triangle. Put on a baking sheet, greased with oil (fat) or on baking paper. Pour the broth into each pie and plug it with a piece of dough.

  • Lubricate the pie with yolk and send it for baking in an oven preheated to 180 degrees for 20-30 minutes (large or small). Then we take out the pies, uncork them one by one and pour in the broth again, close and for another 20-30 minutes.
  • Delivery, storage, features:
  • Serve with a cup of aromatic hot broth. Delicious.
  • Echpochmak is also good the next (next) day. Take it into a plate, pour the broth into the bottom and put it in the micra to warm up. BUT!!! Store echpochmak in the refrigerator!
