Shank roll

Ingredients

pork knuckle any weight
Bay leaf 2-3 pieces
allspice peas 5-6 pieces
carnation 2-3 buds
garlic 3-4 teeth
ground black pepper taste
salt taste
turnip onion 1-2 pieces

Cooking method

  • Soak the shank for 30 minutes or an hour.
  • Wash well, scrape.
  • Cover with water to just cover.
  • Let it boil, remove the foam.
  • Add bay leaves, salt, allspice and cloves.
  • Screw the fire on until it gurgles.
  • Add the onion half an hour before the end of cooking.
  • Cook for 3-3.5 hours so that the bone separates, but the meat does not decay.
  • Take it out, let it cool slightly so that you can work with it.
  • Cut, get the bones.
  • Expand.
  • Cut off the thickened meat and put it in the thinner places.
  • Taste for salt, salt if necessary.
  • Sprinkle with pepper and crushed garlic.
  • Roll up and wrap tightly with gauze or use foil, cling film or forming mesh.
  • Put in a container and put oppression on top.
  • Allow to cool and refrigerate for several hours.
