Sujukh - a colleague of sausages, but it differs in that it is not boiled or smoked, like all other sausages, but dried.

1 kg of beef with fat
40g salt
150g garlic
10g black pepper
20g cumin
20g allspice
intestines

Rinse the meat, dry it well, mince it. Pass the garlic through a meat grinder, add salt, peppers, caraway seeds, mix and pass this mass again through a meat grinder, knead thoroughly, transfer to an enamel or plastic bowl, cover loosely with foil and refrigerate for ripening for 2 days. In the morning and in the evening, we take out the minced meat, knead it and send it back to the refrigerator. Well, then everyone makes sausage as usual. The size of the sausages is optional, We tie with a horseshoe and pierce with a needle. Put the sausages on a flat surface, cover with plywood or any other flat board, put the load and leave for a day.
Then hang Sujukh to dry in a cool, ventilated place for 10-15 days until dry. I use my dehydrator box for this. I dry it in it for a couple of days and only then hang it on the balcony.
I store it in the refrigerator. Wrapped in cling film

A few days are enough for drying, and then on the balcony you can dry in an open box without using a fan. But in a draft, drying temperature 14-18 degrees, drying time 10-15 days
