Guinness Pie with Cheese by Jamie Oliver

Ingredients

Yeast puff pastry (ready-made) 500 g
Lean beef 1 kg
Red onion 3 pcs
Garlic 3 tooth
Butter 30 g
Carrot 2 pcs
Celery stalks (I didn't use it, we can't tolerate them) 2 pcs
Large champignons 4 things
Rosemary 2 twigs
Dark beer (light is not allowed) 500 ml
Olive oil 2 tbsp. l.
Ground black pepper 1 tsp
Wheat flour 2 tbsp. l. with a slide
Cheddar Cheese (I have Gouda) 200 g
Salt taste

Cooking method

  • Prepare food.
  • Rinse the meat, dry it, cut into 2x2 cm cubes.
  • Peel and chop onions and carrots. I rubbed on the middle Berner.
  • Peel the garlic, chop finely.
  • Rinse the mushrooms and celery, dry, cut into small pieces.
  • Chop the rosemary greens.
  • Grate the cheese on a coarse grater.
  • For cooking, you need a deep saucepan with a volume of at least 4 liters, which can be used in the oven. I cooked in a multicooker. First in the Frying mode, then in the Quenching mode.
  • So, heat the olive oil in a saucepan, fry the onions and garlic. Approximately 5 minutes. Add butter, stir.
  • Add carrots, celery, mushrooms in succession. Fry for about 10 minutes.
  • Add meat, rosemary, pepper, stir and fry for another 10 minutes. The meat should completely change color.
  • Add beer and flour, stir. The meat should be completely covered in liquid. Add water if necessary. I didn’t add. and so it was enough.
  • Bring the mixture to a boil, cover and place in the oven for 1.5 hours at 190C, then stir and simmer for another 1 hour. I stewed in a slow cooker for 3 hours, stirring occasionally.
  • Further, the author recommends boiling the filling on the stove until it thickens. I didn't succeed, that is, I tried to do it for about 20 minutes, but to no avail. except that the filling stuck to the bottom of the pan. So I just strained all the filling through a fine sieve. In total, the liquid was about 1 liter. It can be used as a sauce for potatoes, for example. It must be borne in mind. that the filling should not be liquid, but also that after cooling in the refrigerator it will thicken a little.
  • Add 1 \ 2 grated cheese to the filling, mix and cool. It is more convenient to prepare the filling the day before and chill in the refrigerator.
  • Defrost the dough, roll in one direction. I had two plates, and I rolled them out. I would also like to say about the dough. I bought it at Pyaterochka, I didn’t have much choice, I chose the composition without eggs. I have never eaten such a dough. Moreover, the guests did not even believe that it was a shop one. It was so fragrant, airy, with a creamy taste. I threw away the label, but as soon as I get to the store I will definitely buy it and then I will post the name and picture.
  • Grease a mold with a diameter of 24 cm with vegetable oil. Lay out 1 layer so that the edges hang down and there are dough sides along the entire diameter.
  • Put the chilled filling, sprinkle with the remaining 1/2 cheese.
  • Lay out the second layer on top, wrap the edges inward.
  • With a sharp press, make a cross-to-cross line, leave for 20-30 minutes.
  • Brush with milk (or egg) before baking.
  • Bake in an oven preheated to 200C for 45 minutes until golden brown. The exact time depends on your oven.
  • At the end, remove the cake from the oven, leave in the tin for 10 minutes. then turn onto a plate. The cake holds its shape well and does not leak in any place.
  • Cool until warm before slicing.
  • The author recommends serving the green pea pie for such a dish. in my opinion, just blasphemy. We used it with Champagne with strawberries.))) Good warm and cold.)
