Strawberry Jam with White Chocolate

Ingredients

Strawberry 1 kg
Sugar 500 g
White chocolate 100 g
Gelling mixture (Confiture or Zhelfix) 1 sachet
or
Agar agar 1h l. with a slide
Citric acid on the tip of a knife

Cooking method

  • Rinse the strawberries, dry, cut large berries into halves.
  • Break the chocolate into pieces.
  • Cover with sugar, gelling mixture (agar), stir and leave until juice is released and sugar is completely dissolved (1-2 hours). Stir occasionally.
  • Put on fire, bring to a boil and cook, stirring and skimming for about 20 minutes.
  • Add citric acid at the end of cooking.
  • Remove from the stove, add chocolate, stir gently, put in sterilized jars, close and put upside down for 5 minutes. Then turn over and leave to cool completely.
  • Store in a cool place.

I also melted very badly and gave a shade of white, but the result was very pleased.
