Salmon, fresh pineapple and kiwi carpaccio

Ingredients

Fresh salmon 400 g
Kiwi 200 g
Fresh pineapple 250 g
Olive oil (Extra Virgine) 2 tbsp. l.
Lemon 0.5 pcs.
Rucola handful
White sesame or poppy seeds
Sea salt
Chives

Cooking method

  • Fresh red fish carpaccio is very popular in hot Italy. The proposed version of carpaccio not only looks elegant and summer-like on the table, but also pleases with a harmonious unbroken combination of products and a very refreshing taste.
  • Preparation
  • - Fillet of fresh red fish (I have salmon) cut into thin slices, put on a dish, sprinkle with lemon juice and salt a little. Alternatively, you can make a pillow of finely chopped rucola under the fish.
  • - Cut beautiful slices from pineapple and kiwi and put them on top of red fish.
  • - Sprinkle with olive oil and garnish with rucola leaves and onion feathers.
  • - Sprinkle with poppy seeds or sesame seeds and send them to the refrigerator for half an hour.
  • Serve chilled.
