Ingredients

Dough:
dry yeast 3 g
wheat flour c. from. 70 g
milk 100 g
sugar 5 g
Dough:
dough all
wheat flour c. from. 200 g
milk 60 g
condensed milk with sugar 50 g
egg yolk 1 PC
salt 4 g
Extraction:
butter 45 g
wheat flour c. from. 35-50 g
sugar 30 g
vanilla 0.5 g
Filling:
butter 25 g
granulated sugar 1.5-2 tbsp. l
almond petals 50 g
Additionally:
powdered sugar for serving

Cooking method

  • Dough:
  • Mix yeast with flour, add sugar and warm milk, mix. Leave to ferment at room temperature for 45-50 minutes.

  • Add flour, milk, condensed milk and egg yolk to the dough. Knead for 7-8 minutes, then add salt. Knead a soft, non-sticky dough. Fermentation at room temperature for 1 hour.
  • Extraction:
  • Add sugar, remaining flour and softened butter, mashed with vanilla to the dough. Knead a soft, silky, non-sticky dough. Leave it to ferment at room temperature for another 1 hour.
  • Lightly dust the table with flour. Lay out the finished dough, knead and roll into a layer 5-6 mm thick. Brush with melted butter, sprinkle with sugar and almond petals. Roll up.
  • Cut the roll into "washers" with a height of 2.5-3 cm. Put in a mold covered with baking paper, cover with loose foil.
  • Proof for 45-60 minutes.
  • Bake the rolls in an oven preheated to 220C (convection 210C) degrees with steam for the first 5-6 minutes, then lower the temperature to 190C (convection 170C) degrees and bring the rolls to readiness.
  • Put the finished rolls on a wire rack, cool slightly and sprinkle with icing sugar.
