Ingredients

cottage cheese (everything is given in grams !!) 120/185

Cooking method

  • The first column is for casseroles with raisins, the second is without raisins, everything is in grams.
  • Such strange and small grams are given due to the fact that this amount of ingredients goes for 1 serving. Accordingly, increase as many times as you want. Personally, I baked from 1.2 kg of cottage cheese, that is, the recipe was increased 10 times.
  • 1. Beat eggs with sugar, vanilla sugar and salt. Really beat until thick and foamy. Because there are no other leavening agents in the casserole.
  • 2. Mix cottage cheese, semolina, add raisins. Finally, pour in the beaten eggs and stir well. Sour cream, butter and crackers - to prepare the mold !! they are not in the dough !!
  • 3. Grease the form with butter, sprinkle with breadcrumbs, lay out and level the curd mass (in a layer of 5-6 cm, in short, not very thin, so choose the form for your amount of curd mass), grease it on top with sour cream (in the original sour cream with the addition of eggs) and bake for 1 hour at 160 degrees. My oven also produces steam in the casserole mode.
  • I didn't feel like a whole egg for kokat lubrication, so I did without it at all. You can remove a couple of teaspoons of eggs from those in the casserole.
  • 4. Do not open the oven, leave the casserole there until warm. Then take out and let cool.
  • So I wanted it with raisins, as we were fed in the kindergarten. Directly such a dessert, and not just white cottage cheese))). The casserole is adorable. Strong (I love those that do not spread out into porridge), incredibly harmonious in the amount of sugar / sweetness. I would put just as much sugar in a raisin-free one as in a raisin.

I have a lot of books, but there it is forever either for 5 kg of flour (it's good if, or even for 100 kg, they come across))), then for a portion (some kind of minced dumplings: 146g of meat, 43g of onion ...). And so sit and count.))

So that's it. Equip yourself with a calculator - it greatly simplifies the process.

We take a casserole with raisins, which is 120g of cottage cheese. For example, you have 680g of cottage cheese in the refrigerator and you would put it all in a casserole and attach it. It's simple. Divide YOUR 680gr. for 120g of the RECIPE and get 5.66. This is the factor by which all other ingredients in the RECIPE must be multiplied.
I.e. cottage cheese 680g
semolina 5.66X10 = 56.6gr (rounded to 60gr)
sugar 5.66X15 = 84.9g (of course, we round up to 85g)), etc.

If you have fewer products than in the recipe, everything is the same, but your coefficient will simply turn out to be less than one. For example, the recipe contains 4800 g of flour, but you want to take 500 g of flour. All the same, divide YOUR amount of product by the amount of the RECIPE. 500/4800 = 0.104 is the factor by which you will multiply the rest of the recipe. Mandatory rule: the products that you divide must be in the same calculation: both in grams or kilograms, both in liters or milliliters ...

Juice a little different from what we ate, but delicious: the classic shortbread dough is hard and crumbly. But in 1968. soda and ammonium, i.e. leavening agents, have already been added. I haven't reproduced it yet, today I wanted to, but the casserole interrupted everything. It was necessary to attach really a lot of cottage cheese, but you can't shove so much in the juice!)))
