Chocolate-based jelly cake with Borodino bread

Ingredients

For mousse
Pureed cottage cheese 170 g
Cream cheese 70 g
Natural thick yogurt 250 g
Sugar 2-3 st. l.
Gelatin 10 g
Cherry jelly ready 275 g
For the base
Butter 50 g
Chocolate 50-75-100 g
Borodinsky bread 150 g
To serve cinnamon, fine chocolate decor

Cooking method

  • The foundation.
  • Cut the bread into very small cubes. It can be crumbled, but I wanted the bread to feel like it.
  • Melt chocolate with butter, mix with bread.
  • Chocolate-based jelly cake with Borodino bread
  • Tamp the resulting mass with a layer in a mold, placing a sheet of parchment on the bottom. Put in the refrigerator and set aside.
  • Mousse.
  • Soak gelatin in 50 ml of cold boiled water for 40 minutes. Then dissolve it over low heat. Add sugar and stir until dissolved. (Sugar can be increased if desired).
  • Combine dairy products and mix until smooth, add gelatin. Let the mass thicken a little and divide in half.
  • Finely chop the finished cherry jelly. Mix half of the yoghurt mass with the jelly and put on the cake. Place the other half on top, being careful not to mix the layers. Put everything in the refrigerator until it solidifies completely. Better than 12 hours.
  • Remove the finished product from the mold, cut into 10 equal pieces, sprinkle with ground cinnamon, decorate with fine chocolate decor.

Form 22x14, height of cakes 5 cm.
How much chocolate to take. The first time I took 50 g. It tasted enough, but the base in the finished cake tended to crumble, and I decided that the chocolate should be increased. But we must remember that the more chocolate, the more it will hammer the feeling of bread. I wanted to preserve this feeling.
Do not neglect cinnamon, it extinguishes the sour milk content of the mousse and makes the taste of the cake complete, as if rounding it off.
I used cherry jelly this... I didn't put sugar in the yogurt mass. In my opinion, chocolate, jelly and cinnamon give quite enough sweetness.
