Zucchini curry sauce

Ingredients

squash 300-350 g
bulb onions 1 PC.
milk 200 ml
vegetable oil 2 tbsp. l.
ground chili pepper 0.25 tsp
turmeric 0.25 tsp
dry mango powder 0.25 tsp
curry powder 1 tbsp. l.
salt taste

Cooking method

  • This sauce is a modification of the sauce zucchini bechamel.
  • Dice the onion and fry in vegetable oil. Add curry, turmeric, chili peppers and stir fry all together for 1 minute.
  • Then add the diced zucchini to the pan, mix thoroughly, cover and leave to simmer for 10 minutes.

  • Pour in milk, close the pan again and simmer the courgettes until soft.

  • Then remove the lid and increase the heat to evaporate the liquid. When almost all the liquid has evaporated, stirring vigorously, add the mango powder. The sauce will thicken instantly.

  • Remove it from the stove, cool slightly and grind the mixture until smooth with a blender. Salt to taste.

It turned out delicious, already horror! No, well, maybe, of course, and not for an amateur ... I'm just an amateur.

Dry mango powder Is a traditional Indian herb and is sold in the same place as other Indian products. It is added to dishes not for some special taste, but for acidification. In our case, it also serves as a thickener for the milk base of the sauce. If necessary, it can be replaced with lemon juice (also half a spoon or a little more).

This is what a fish (halibut) looks like baked with this sauce.

Just one question. Curry already contains turmeric, why else? Maybe take more curry, but not spicy?

Well, curry comes across different - when it is sharper, when not. And the color doesn't always come out pretty. So I add a little bit of turmeric.
This time the sauce turned out to be the same color as the yolk.
And you can cook to your taste!
