Dessert cold soup with apricots and strawberries


Fresh apricots 400 g
Fresh strawberries 200 g
Apricot juice with pulp 300 ml
Apple juice without pulp 300 ml
Sugar 2 tbsp. l.
Vanillin pinch
Fresh mint 1 branch

Cooking method

  • Divide the apricots into halves and peel them.
  • Pour apple and apricot juice into a saucepan, add sugar and vanillin. Stir, bring to a boil and put halved apricots in boiling syrup. Cook over low heat for 2 minutes, then remove half of the apricots with a slotted spoon on a saucer. Cook the remaining apricots in the syrup for another 2 minutes. Remove from the stove and use a blender to grind until smooth. Cut the halves that were left earlier, cut into slices and put in the cooked puree.
  • Refrigerate at room temperature, then refrigerate.
  • Before serving, put fresh strawberries on plates and cover with chilled soup. Decorate with mint leaves.
