Ingredients

Dough (pre-enzyme)
grape fruit yeast (any) 85 grams
wheat flour 1 grade 85 grams
honey 1 tsp

wheat sourdough 100% moisture active 150 grams

premium wheat flour 400 gram
margarine with vegetable fats (sunflower oil) 80 gram
sugar 100g
salt 0.5 tsp
raisins 70 grams
instant yeast 2 grams
vanilla taste
strong sweet tea for lubrication

Cooking method

  • Mix all products until smooth.
  • Cover with foil with holes and leave for 12 hours.

  • Divide the dough into equal parts using a scale.
  • We shape the buns.

  • Lubricate the buns with sweet strong tea.
  • We bake in an oven heated to 200 degrees for the first 10 minutes with steam.
  • Remove steam. Briefly ventilate the oven. Bake until tender at a temperature of 180 degrees. Cover the top with foil if necessary.
  • I have a total baking time of 20 minutes.
