Ingredients

Young beet with tops 1 medium
Prunes 40 gr.
Blueberry handful
Brown sugar 1 tbsp. l. (depending on the sweetness of the beets)
Balsamic vinegar 1/2 tsp
Egg yolks 2 pcs.
Cream 32% fat 150 ml.
Cream 23% fat 150 pp.
Sugar 1 tsp

Cooking method

  • Cooking beets:
  • Beetroot young, fresh, carefully wash with a brush. We cut off not beautiful places. We leave the beautiful shoots of tops and try not to clean - we save all the most useful and valuable. We bake in our favorite way - I baked in foil in a slow cooker.

  • Next, grind together with brown sugar, balsamic and blueberries in a blender very carefully. We need a very homogenized puree. We transfer to the bowl.
  • Making ice cream
  • In the same blender where the beets were, we send the yolks of the eggs, the mixture of cream and sugar. Beat well, but not for long - before mixing. Pour this into a saucepan and bring to a boil, stirring carefully, but do not boil. Let's just brew well. You can do this in a water bath, but it takes longer. Next, cool the creamy egg mixture. Scald the prunes and chop them coarsely. Now we send the cooled egg-creamy mass, prunes into the bowl with beets. Mix everything well. Let cool and place in an ice cream maker.

Delicious, creamy, silky, crystal-free ice cream with beet and prune flavor and aroma. Very healthy and tasty, especially for those who do not eat beets!
