Sundae (without eggs)

Ingredients

cream 33% 300 ml
milk 3.2% 250 ml
corn starch 10 g
sugar 90 g
powdered milk 40 g
vanilla sugar 1 sachet

Cooking method

  • 1. Combine milk powder, sugar and vanilla sugar in a saucepan. Add 200 ml of milk and put on fire.
  • 2. Mix starch and 50 ml of milk in a separate container. When our milk mixture boils, pour the starch into it in a thin stream and cook with constant stirring for 2-3 minutes.
  • 3. Cool the resulting milk jelly and put it in the refrigerator.
  • 4. Whisk the cooled cream until soft peaks, add strained jelly to them and mix everything well.
  • 5. Do in an ice cream maker for 30-40 minutes. Can be served immediately or put in the freezer for 2 hours.

Note

Wonderful creamy ice cream. Most importantly, there are no ice crystals in it, it does not melt so quickly, it has a creamy texture. Of all the ice cream sundaes, this one is the best. I took the recipe from Chadeyka and again thanks a lot to her.

And in the GOST ice cream recipe, starch is potato... So, you can safely use it.

Made according to this recipe, I liked the texture. Before, I always made ice cream by brewing milk with yolks.
But in this recipe I really feel the taste of cream, it spoils the taste of ice cream. Although with all my heart I put both vanilla sugar and natural vanilla.
