Cooking method

  • Both breads are the result of my experiments in the kitchen. If the loaf is made in a baguette, then the cut will turn out to be "Orange". I call the second bread "Marble Bast" for its clumsy elegance. Despite such a vague shape, I really like it due to the carrot decoration and porous crumb. Again I want to ask forgiveness from the bakers for the liberties and violation of the rules of baking.
  • Prepared dough in advance. The dough was divided into 3 parts: 1 for white dough, and 2 for orange. I also separated flour and salt.
  • And again I used the Moulinex Soup Cooker to make the now orange dough. I am satisfied with this by the fact that a minimum of effort is spent, and the result is good. Choose bright and juicy carrots. She poured the chopped carrots with milk and water, set the temperature to 85 degrees and the time to 26 minutes. After the end of the program, the mixture was heated for another 10 minutes. Then she ground it on the "pulse" program to a puree state, put it in a container and left it to cool. I set aside 2 hours of a spoonful of the mixture for lubrication.

  • Now I've kneaded the dough. The dough will be steep. The amount of flour can be increased / decreased, moisture must be taken into account. First white, then orange. This is what orange looks like. I mixed everything at once in a Bosch MUM86 combine.

  • Each dough was greased with vegetable oil and put for proofing. When the dough had doubled, she began to mold the bread. First I stretched and folded the dough. Then she cut off the required amount. After a few minutes, she rolled out the orange and white dough. I connected them by holding the edges together. I rolled out the next piece of orange dough and placed a white dough flagellum around the edge. She molded a "baguette", placed it in the middle of the orange-white cake and joined the edges. I placed such a loaf on a towel between two packages of paper so that it would not blur and left it to proof. It's all easier in a baguette holder.

  • The oven was warmed up on the "convection" mode to a temperature of 200 degrees along with a baking sheet. I dusted the loaf with flour and made oblique cuts. I sprayed the oven with water from a cooking spray and quickly placed a loaf in it. After a few minutes she sprinkled it again and reduced the temperature to 170 degrees. Baked until slightly golden brown.

  • Lubricated the second bread with a carrot mixture with a quail egg. She baked in the same way as a loaf, sprinkling and reducing the temperature. I decided to fry this bread a little more. I like the crunchy carrots on the surface.
