Bean paste with plums

Ingredients

White beans 250 g
Frozen pitted plums (I have yellow ones) 250 g
Sugar 15 g
Bulb onions 75 g
Vegetable oil 3 tbsp. l.
Salt taste

Cooking method

  • Pour the beans with water and leave for 12 hours. Then drain the water, pour in fresh water and cook until the beans are tender (about 40 minutes). Throw the finished beans in a colander.
  • Defrost the plums, peel, leave the juice.
  • Finely chop the onion, fry until soft in hot oil.
  • Add plums to the onion along with juice and sugar, boil for 5 minutes, stirring occasionally.
  • Add cooked beans, stir. Season to taste and simmer for 10 minutes. If possible, leave to infuse under the lid for about 20 minutes.
  • Grind the mass with a blender.
  • Serve chilled with croutons.

Angela, the plum itself is very sweet, but we picked it not quite ripe ... that's why it is so good with sourness. As for cherries, you can try, but I once cooked meat with cherries a couple of times, and right after the meal I was sore, although of course everything is individual here.
