Ingredients

Flour 340 g
Spelled flour 10 g
Semolina 10 g
Wheat leaven 1 tbsp. l. on horseback
Serum (I have Tan) 100 ml
Purified water 120 ml
Quail egg 1 PC.
Sugar 0.5 tsp
Salt 5 g (on tan-3 g)
Olive oil infused with herbs 15 g
Dry fast yeast 3.5 g
For dusting and greasing: herbal oil 2 tbsp. l.
Herbs to taste, dry 2 tbsp. l.

Cooking method

  • Twisted bread in aromatic butter with herbs
  • I decided to make twisted loaves. The recipe made a completely different bread. Therefore, I had to take only an idea and then come up with a recipe myself.
  • She kneaded the dough on a tan, reduced salt in this regard, added spelled and semolina for strength and aroma. The oil was used by Extra Vizin Sardinian, infused independently on herbs (rosemary, a clove of garlic, oregano, allspice and a small piece of bay leaf with a handful of chili. The composition may be to your taste. But I have loaves with an Italian accent, so also Italian dry herbs took from the finished mixture.
  • The second loaf was sprinkled with a mixture of home-grown basil of different varieties. As I remember, there was lemon, nutmeg, purple basil, chili, a pinch of oregano.
  • To improve the quality of the dough, I added a spoonful of the freshest sourdough and reduced the amount of yeast.
  • Preparation
  • - Put all the flour in the kneader, pour in slightly warmed tan and water, add the leaven, mix and leave for the development of gluten for 20 minutes.
  • - Then add the egg (without it), olive oil and start kneading at medium speed, then go to low speed.
  • Before the end of the batch, gradually add salt and sugar.

  • - Leave the dough to come up in the bowl. After the dough has doubled (I have it after 40 minutes), knead again at low speed for a couple of minutes, form a lump, put it in a bowl greased with olive oil under a hat. Leave in a warm place until the dough doubles.

  • - Then we divide the dough into two parts. We fold it once, let it stand under a towel for 10 minutes.
  • - Roll out the dough thinly into an oval on a baking mat (the length of the oval is no more than 25 cm), grease with oil and sprinkle with your favorite herbs. Cut the dough into strips, not reaching the edge by about 1/3. Check if all the stripes are cut to the end.

  • We carefully, but tightly roll up our loaf. Tuck the ends of the strips under the loaf. We put the loaves in a warm, humid place or under a towel.

  • - Lubricate the loaves with yolk mixed with an egg, and bake in a well-heated oven at 230 C for 5 minutes, then reduce to 180 C and until tender.

The addition of herbal oil to the bread gives the bread a noble deep taste and aroma, both during baking and in the finished product. And sprinkling with dry herbs emphasizes this aroma even more. There are a lot of crust, soft crumb inside. Very nice to cut into slices along the lines between the crusts. Just such a joyful bread!

The bread used a large amount of extra virgin olive oil, "liquid gold" as the Greeks called this oil.

normalization of the digestive process, prevention and treatment of most gastrointestinal diseases;

increasing immune functions;

slowing down the aging process of tissues and organs (due to the large amount of antioxidants contained in olive oil);

improvement of mental activity, strengthening of memory, effective prevention of nervous disorders;

active participation in the early healing of wounds and injuries;

protection of the gastric mucosa from ulcers;

strengthening of bone tissue;

effective prevention of cancer;

It is worth mentioning that the medicinal properties of olive oil will serve well for pregnant women. The benefits are provided due to the high content of monounsaturated fatty acids, which are involved in the formation of the brain of the unborn child, as well as its nervous system.
Which olive oil has the best medicinal properties?
To experience the fullness of the medicinal properties of olive oil, you need to know which product is most useful. You should choose oil prepared by cold pressing (sometimes they also say - pressing). The inscription on the label should read: "Extra virgin olive oil". This means that only mechanical means were used to obtain the oil, and it was not subjected to any heat or chemical treatment. It is this type of olive oil - unrefined, cold-pressed - that has the highest useful qualities.
