Carrot cake with nut butter and seeds

Ingredients

Sesame Optional
Whole grain flour 3/4 cup
General purpose wheat flour 1/2 cup
Soda 1 tsp
Baking powder 1 tsp
Salt 1/2 tsp
Cinnamon 1 tsp
Ground allspice 1 tsp
Carrots, finely grated 340 g
Large eggs, C0 4 things.
Brown sugar 280 g
Vanilla extract 1 tsp
Odorless vegetable oil 185 ml
Nut butter (tahini, hazelnut, etc.) 190 g
Walnuts, chopped 100-120 g
Pumpkin seeds, sunflower seeds 2/3 cup

Cooking method

  • Cup = 250ml
  • You need a form with a pipe in the center with a capacity of 2.5 liters (bundt-form)
  • Oven 175 deg.
  • 1. Grease the form with oil, sprinkle with breadcrumbs or flour.
  • 2. Pour sesame seeds on the bottom of the mold (according to the quantity - at your discretion)
  • 3. Mix and sift dry ingredients (both flour, baking soda, baking powder, salt, cinnamon, allspice).
  • 4. Beat eggs, vanilla sugar; add butter and nut butter, beat.
  • 5. Add flour mixture and beat on low speed (briefly, just before mixing ingredients).
  • 6. Stir in the nuts and seeds with a spatula.
  • 7. Pour into a mold, sprinkle with sesame seeds on top.
  • 8. Bake 1h 15min until toothpick dry.
  • 9. Let the cake stand in the form for 10-15 minutes, then turn over on the wire rack, cool completely.

I found the recipe in one of the books of my beloved Maida Heatter (Best Dessert Book Ever), when there was a need to dispose of the remains of Urbech (nut butter) from several cans. The original uses tahini paste, I have a mixture of hazelnut and almond.
Cupcake of unusual (for carrot) taste due to nut paste, at the same time juicy, soft, seeds and sesame seeds crunch pleasantly on the teeth.
Cupcake keeps well in the freezer, wrapped in foil and cellophane.
When baking, I used the De Lis, Nordic Ware mold.
