Cognac 10 ml
Gelatin 6 g
Cream-souffle chocolate:
Cream 33% 250 ml
Milk chocolate 60 g
Chocolate Nut Butter or Nutella 50 g
Sugar 50 g
Vanilla sugar 15 g
Gelatin 8 g
Impregnation:
Cognac 1 tbsp. l.
Raspberry syrup (I have jelly) 50 ml
Glaze:
Cream 33% 65 ml
Water 50 ml
Dark chocolate 100 g
Honey 100 ml
Gelatin 10 g
Sugar 100 g

Cooking method

  • The Mozart cake is quite famous, there are many of its recipes on the Internet, but I wanted, since I am making it for the first time, to find the best one. The choice fell on a recipe from Karl Schumacher.
  • The highlight of the cake is the combination of pistachio soufflé with chocolate on a chocolate sponge cake. Anticipating an unearthly taste, let's start cooking!
  • Preparation
  • Biscuit:
  • - The biscuit can be prepared in advance.
  • We need: chocolate, butter, flour, sugar and icing sugar, 60 g of egg yolks, 90 g of proteins. This is about 3 eggs. (I weighed in and it came out straight gram to gram 3 of a medium sized egg.)
  • - Let's melt the chocolate, butter. Add powdered sugar or sugar.
  • - Add the yolks to the cooled mass. Whisk the whites with sugar and add portions to the chocolate.
  • - Add flour. We mix.
  • - Put the dough into a mold, greased with a non-stick compound and sprinkled with flour. Rotate the mold to dry and shake the dough and send it to bake at 180 C for about 15 minutes.
  • - Let the biscuit cool down. We release from the form. The top (crust) of the biscuit can be removed, it crumbles, it is a chocolate biscuit.

  • Cream-souffle pistachio:
  • - Fill the gelatin with a little cold water.
  • - Pour milk into a saucepan, mix with sugar and yolk, put in a water bath and, stirring constantly, bring until thickened.
  • - Add loose gelatin, pistachio paste and marzipan to the cream. I have ready-made pistachio paste - Italian. In the absence of pistachio paste, add 30 g more marzipan and 2 tbsp. l. ground pistachios. Mix and keep in a water bath until slightly thickened.
  • - Let the mass cool, whip the cream and add to the mass. Pour onto a biscuit, which was placed in the desired size form, put in the refrigerator. (This can be done the day before the cake is ready.)
  • Chocolate soufflé cream:
  • - This requires gelatin, cream, Nutella, sugar and milk chocolate.
  • - Mix chocolate, Nutella, vanilla sugar. We heat the cream (80 ml), put the chocolate and everything else there. Add the prepared gelatin to the warm mass. Stir until the gelatin dissolves. Whip the remaining cream with sugar and, when the mass has cooled, mix both masses. Pour it onto our cake and put it in the cold for at least 5 hours.
  • Before serving, pour the cake with icing and decorate.
  • This is the kind of marzipan and pistachio cream I used.
