homemade yogurt 150 ml

Cream:
sour cream, the fatter the better 250-300 ml
sugar or powder 1 tbsp. l. (for light sweetness)
Interlayer (optional):
pear (for example) 2 pcs.

seasonal fruits / berries from 250 g
cream 35-40% 250 ml
vanillin taste

cream 35-40% 250 ml

Cooking method

  • I would like to propose the version of "Milk Girl" in my favorite version, accidentally invented for my daughter's birthday.
  • Pictured is a 3.6 kg cake from a double portion. Photos are old, so quality ....

  • Cakes:
  • The manufacturing technology is no different from the classical one; I like to replace some of the flour with oatmeal.
  • Sift flour and mix with baking powder. Beat eggs lightly. Add condensed milk and flour. We get a batter. On a silicone mat / parchment, bake 6 cakes in an oven preheated to 200 g for 5 minutes.
  • Impregnation:
  • Mix the yogurt and sugar until just a little sweet.
  • Cream:
  • Beat the sour cream with sugar. The amount of sugar should be for a light sweetness. If the sour cream is liquid, then it must first be weighed to thicken it.
  • Interlayer:
  • Any fruit (berry) - a companion to the main creamy-fruit layer, puree and boil with sugar. Add rum / liqueur if desired.
  • Creamy fruit (berry) layer:
  • Beat the cream with sugar and vanilla until thick and dense. Fruit, in this case, I cut the peach (nectarine) into quarters. Mix fruit with whipped cream lightly.
  • Cake coating:
  • Beat the cream with sugar and vanilla until thick and dense.
  • Assembly:
  • 1. Spread the cakes on the table and coat with impregnation with a brush. Allow to fully absorb. In principle, impregnation can be excluded, but I always do it with it, so that the cakes are very tender in the finished cake.
  • 2. Put the first cake on a dish. We spread part of the sour cream. Cover with the second cake soaked down. Again the cream and the third cake. Optionally, between the cakes, on top of the sour cream, you can add a layer of puréed fruits (berries).
  • 3. Lay out the creamy fruit layer.
  • 4. Repeat the second step with the cakes.
  • 5. Cover the cake with whipped cream on all sides
  • 6. Decorate to taste. The main photo shows grapes, walnuts with "petals", marmalade melted in the microwave + lemon juice
  • 7. We give the night for impregnation.
  • Option with Victoria, double rate, weight 3.2 kg. There was not enough cream in the berry layer. This is the first option, at the dacha it was not possible to buy the necessary cream in addition:
