Handles will go very well. I have a dough sheeter, but it is possible without it (in the field, that is, at a party). I bought a thin handle (for a rake), and when there was nothing at all, I pulled the dough with my hands on an oiled table, on a film (so they loved this pita, well, nothing without it). Now it is more convenient for me to use a thin rolling pin (handle), a dough roll, large volumes, and for one pitta faster with handles, IMHO. Good luck!
