Salmon with polenta and zucchini


polenta 0.5 MS
zucchini (small) 1 PC
cream cheese or cream (33%) ~ 40 g
lightly salted or smoked salmon 4 slices
Pine nuts
salt pepper

Cooking method

  • 1. Finely chop the zucchini and fry in a little oil and garlic.
  • 2. Add about 1 tbsp. l. cream cheese or cream.
  • 3. Finely chop some parsley and add most to the courgettes.
  • 4. Prepare polenta according to package directions.
  • 5. Lay it out on a flat and smooth it about 1-1.5 cm thick.
  • 6. When the polenta hardens cut circles out of it. Additionally, they can be fried.
  • 7. Put the zucchini on the polenta circles, then the salmon slices.
  • 8. Mix sour cream with a teaspoon of lemon juice and add the rest of the parsley.
  • 9. Place a spoonful of sauce on top of the salmon.
  • 11. Sprinkle with capers and toasted pine nuts.
