Saxon apple-ginger compote (Ingwer-apfel Kompott)

Ingredients

apple juice / cider 100 ml

cold water to dilute starch 2 tbsp
soft cottage cheese 250 g
whipping cream 200 ml

Cooking method

  • In Saxony, the term compote is applied to the dessert in general.
  • Peel and core the apples, chop. Grind the ginger (grate or chop finely). Add ginger, sugar, lemon juice, apple juice to apples and bring to a boil. Cook for 10 minutes over low heat. Dissolve the starch with cold water and add to the compote, boil and immediately remove from the heat. Whip the cream with vanilla sugar and stir in the cottage cheese (scroll it in the food processor until it is creamy). Put the finished cooled compote in a serving container and put the curd-creamy mass on top.
