Cooking method

  • We take a sieve or colander, put folded gauze or a waffle towel in several layers in it and pour our mixture there.   • Savoyardi cookie baking:
  • Beat the yolks separately with 25 gr. sugar to a white thick foam.

  • Add a quarter of the proteins to the bowl with the yolks, mix gently from top to bottom, add the sifted flour and starch, mix and add the remaining proteins, also mix from top to bottom, trying not to spoil the structure of the dough. Put the cookies through a pastry bag on a pre-prepared baking sheet (preferably take a large nozzle), sprinkle the cookies with sugar or powder and send them to preheated to 170 degrees. oven, bake for 10-12 minutes, then lower the temperature to 140 degrees. and bake for another 10-15 minutes until golden cheeks)) Tiramisu made from simple products photo well, quite unsuccessful, but so far what is. I had to bake 2 norms, because the first norm was eaten immediately, the second norm went into dessert with a small remainder of the first norm))
  • Cream and dessert assembly:
  • the approximate ratio of products in the cream: cheese-eggs-sugar 100 grams-1 piece-15 grams, which means how much mascarpone we got (each time I get a different amount from 370- to 480, why I don't know, but I think it depends on the quality of the butter ) mascarpone 300-500 gr, eggs 3-5 pcs, sugar (preferably powder) 45-75 gr.
  • Since we take raw eggs into the cream, they should be washed with soap and boiled water. Punch the mascarpone with a blender until smooth. Beat the yolks with sugar (powder) until a thick white foam (at least 4 minutes, preferably longer), continuing to beat, add mascarpone spoonfully. Beat the whites separately until hot peaks and gently mix them into the cheese-yolk mass.
  • For impregnation, we prepare good tasty coffee, you can add cognac, amaretto there. Quickly dip cookies into our coffee, put them in a mold, cover with a layer of cream, sprinkle with cocoa (I had a sweet cocoa drink), again a layer of cookies, cream, cocoa ...until it's over, leave it in the fridge to soak overnight, and ...Tiramisu made from simple products
