Ingredients

chicken's meat 1360 gram
nitrite salt 27 grams
dried apricots handful
spices in the minced meat I have garlic, a mixture of peppers, nutmeg, ground black pepper taste
ice water 140 grams

Cooking method

  • I took a chicken carcass. She cut meat off her. I cut it into pieces arbitrarily, not finely, as much as possible "with a quail egg". I added salt, spices and kneaded with a mixer using a "spatula" attachment for 10 minutes, gradually adding water. I left it in the refrigerator for 10 hours.
  • Dried apricots poured boiling water. Covered for 5 minutes, cut the large into 3, and the small into two.
  • We cut off the film. We put half of the meat there. We spread without voids. Leave a free edge on both sides. You can watch the process in the video.
  • We wrap it in a roll, tuck the ends and put them in a net. We tie the ends. We insert the thermometer.
  • Add dried apricots to the second half of the minced meat. Mix well. On the second piece of film, we pass it with a wet hand, scatter the structural spices, distribute the minced meat and repeat the procedure. I put in some structural spices.
  • We put in the oven. We raise the temperature to 60 degrees per hour. Then we set the temperature to 80 and cook until the temperature in the loaf reaches 68 degrees. Turn on the airflow and set the temperature to 100. Bake a little on top for 15 minutes.
  • Two chicken rolls We take out, cool. We put it in the refrigerator for several hours.
