red currant puree 150 ml
yolk 1 PC.

sugar 50 g
White chocolate 30 g
gelatin 5 g
meringue (protein + syrup) 3 table. l.
Blueberry Jelly Ganache:
Blueberry puree 150 ml
dark chocolate 50 g
sugar 50 g
gelatin 5 g
blueberry liqueur or syrup 20 ml

Cooking method

  • I think I found a recipe that is specifically suitable for the competition.
  • A cake specially designed for the Steba competition.
  • Biscuit:
  • Preheat the oven to 180 °.
  • Sift flour, milk powder and starch together into a separate bowl.
  • Whisk the egg yolks with the powdered sugar until three times the volume. Add condensed milk.
  • Melt the butter.
  • Sift dry ingredients over the yolk mass. Stir gently.
  • Put part of the dough in butter and stir until they combine.
  • Then pour everything into the main dough and mix gently again.
  • Pour into mold. Bake until dry, about 15-20 minutes.
  • Red currant mousse:
  • Soak the gelatin.
  • Heat the currant puree in a saucepan on the stove. Mix the yolk, sugar, starch well and combine with currants.
  • Cook, stirring continuously until it thickens. Let's cool down a little.
  • We put white chocolate. Mix well until smooth. Add gelatin. We break through with a blender. Cool it down.
  • Put the meringue (whipped egg whites + sugar syrup). Mix everything well.
  • Blueberry Jelly Ganache:
  • Soak the gelatin.
  • Mix blueberry puree with sugar. Heat until sugar dissolves. We remove from the stove. Add chocolate.
  • Mix well. Add gelatin and liqueur. Punch with a blender until smooth.
  • Assembly:
  • The biscuit turns out to be very moist, oily, it is not necessary to soak it.
  • Put the biscuit in the mold. Coat with melted white chocolate and pour out the red currant mousse. We put it in the freezer.
  • When the mousse hardens, pour jelly-ganache on top. We put it in the freezer until it solidifies.
  • We take out of the form.
  • We do icing. We paint in the desired colors: black, red, yellow. Cut out a white circle from sugar mastic, smaller than the cake (12 cm). We draw the flag, write the names.
