Ingredients

Meat shank without articular bone 1 PC
for broth:
Bulb onions 1 PC
Carrot 1 PC
Garlic 1 clove
Salt taste
spices (cumin, cloves, marjoram, basil, bitter peas, allspice, seasonings for broth)
To lubricate the shank (marinade)
pepper taste
garlic 1-2 cloves
marjoram + basil 0.5 tsp
honey 1 d. L.
soy sauce 1 d. L.

Cooking method

  • I never participated in contests on forums, and this time I didn't seem to want to, but Shtebochka who came to me "violated" all my plans and I decided to cook German dishes, one of which I am posting now. Of course, this may not be a competitive dish, but it turns out delicious (as the eaters say)
  • So we are preparing the knuckle or as I read on the German forum Eisbein
  • I've never been to Germany, so I just read it ...
  • The first step is to boil the shank in broth with the addition of carrots, onions, spices and garlic. We cook for at least 30 minutes on the Meat mode at a pressure of 0.7, if your shank is with articular bone, then at least 45-60 minutes
  • Then we take out the shank from the broth (I did not pour out the broth ... well, just my hand did not rise, ahead of the video about broth with spetzli), cool the shank, grease it with glaze sauce and bake until cooked for 10-15 minutes at a temperature of 200 in AF
  • I serve the shank with cabbage, the same in German, the video recipe will be a little later.

Note

I have been doing the knuckle in this way for a long time and of course I have always associated it with Germany ... well, just the knuckle and Germany is like something inseparable, like cabbage, which I will post a little later.
