Sturgeon in its own juice (Steba DD1 and DD2)

Ingredients

sturgeon 1 PC
salt, sugar, white pepper, fennel and / or anise
lemon juice 1 tbsp. l.

Cooking method

  • Rinse the sturgeon well, cut off the head and tail. Make a deep cut along the ridge from the inside of the fish and take out the vizigu (use together with the head and tail for the sturgeon hodgepodge). Dip in boiling water for 1.5 minutes and immediately cool under cold water. Remove the skin along with the cartilaginous growths. Put the fish on the foil, rub with salt, sugar, pepper and chopped fennel or anise (you can take dry) inside and out, add lemon juice and you can add a couple of drops of "liquid smoke". I sprinkled it with sweet paprika. It should look something like this:

  • Wrap the fish tightly in several layers of foil, place in a bowl and add 100 ml of water. Fish mode 0.7 10 minutes. After unblocking, cool the fish in foil without opening, put in the refrigerator for 12-24 hours. Cut with a sharp knife. Serve with fresh vegetables and boiled potatoes.

Exceptionally delicious. You don't need to add a lot of spices to keep the taste of fish pronounced.
