Ingredients

Raw almonds (or almond flour) 110 g
Sugar 190 g
Water 70 ml
Almond essence 2-3 drops
Powdered sugar on demand

Cooking method

  • 1. Pour boiling water over the almonds, drain and peel after a few minutes. Dry.
  • 2. Dry the kernels in a pan for 2 minutes - no need to fry.
  • 3. Grind on a blender until porridge.
  • 4. Pour sugar with water and cook the syrup. The density of the syrup should be such that a ball can be rolled out of a drop of this syrup. Thus, after boiling, the syrup was boiled for another 12 minutes.
  • 5. Pour almonds into the syrup, drip the essence, stir well and boil for another 1-2 minutes.
  • 6. If the marzipan crumbles, add a little water. I added 2 tbsp. l.

  • 7. Place on a board, sprinkled with powdered sugar and shape. Marzipan should be kept wrapped in plastic wrap.
  • I made it for candy Mozartkugel... Probably, this marzipan is not suitable for detailed modeling - it is not so elastic. But for working with large details - quite.
  • The output was 330 g. I also added water and powdered sugar, so the output may be different.

MARZIPANS - a mixture of powdered sugar with powdered nuts (usually almonds) in a ratio of 1: 2 or 2: 3. The resulting mass is well shaped without gluing additives, and candies can be made from it (with or without glazing). You can also cook marzipans at home. This requires: 0.5 kg of peeled almond kernels, 15 pcs. bitter almonds, about 200 g of fruit sugar, 1 tbsp. spoon of water. Scald the almonds, remove the skin, dry in the oven over very low heat with the door open (not allowing the nuts to turn yellow). Then grind in a coffee grinder as fine as possible. Prepare powdered sugar from sugar and sift it through a fine sieve. Mix both components (preferably with a mixer) into a homogeneous mass, put it in a porcelain cup. Then sprinkle a spoonful of cold boiled water into this mixture with a spray bottle, simultaneously stirring the mass continuously and evenly. Then you can add 50 g of washed and finely chopped raisins, mix and skip everything 4-5 times through a meat grinder. After that, add 20-50 g of powdered fruit sugar to the marzipan mass, place it in a thick-walled metal bowl and heat it over very low heat.
