Curd dough strudel with salmon by Karl Schumacher

Ingredients

For 2 strudel dough:
flour 170 g
softened butter 170 g
cottage cheese 170 g
Filling:
baked salmon (boiled) 240 g
cottage cheese 300 g
green onion 35 g
dill bundle
egg to grease 1 PC

Cooking method

  • I present to your attention a baking version of Karl Schumacher, a famous Austrian pastry chef. It would seem that what is so special here is a strudel made from curd dough. But!!! Karl prepares it using the puff technology.
  • And it's not difficult at all - I suggest you try it.
  • We knead the dough from all the specified ingredients: first, mix the softened butter with cottage cheese, then combine with flour. Wrap the dough in foil (make a flat square) and put it in the refrigerator overnight.
  • In the morning we roll it into a 40x50 layer and fold it first three times - roll it out, then four times. Curd dough strudel with salmon by Karl Schumacher We roll it into a layer, 2 cm thick (I got less than 0.8 cm) and cut it into 4 strips (two identical smaller ones, two larger ones).

  • Put the finished strudels in the freezer for 15 minutes. Mix all the ingredients for the filling.

  • We send to bake in the oven for 25 minutes at 200 * C.
