Cooking method

  • The roll recipe, or rather its idea, I saw on one of the Japanese culinary sites and fell in love with it at first sight! I replaced sakura flowers with apple-tree flowers (the cherry blossomed!). I had to fantasize with the biscuit, it consisted of pasta - shiro, which is made from white Japanese beans, I replaced it with cream cheese! Because of the shiro, I also had to replace the cream, I made my own, which I had invented a long time ago! Try it!
  • How to cook pickled apple (cherry) flowers? It's very simple, pour wine vinegar over them and put them under pressure for a week. To store them in a colander, let it drain well and, after filling it with coarse sea salt, place it in a sealed container, store it in the refrigerator. Or order pickled sakura flowers in the online store.
  • Before baking the biscuit, rinse the flowers under running water and soak in cold water for 2 hours. Pat dry with a paper towel.
  • Line the flowers on half a baking sheet.

  • Mix the yolks with sugar (40 g) and place in a steam bath, beat constantly with a whisk until fluffy, heat to a temperature of 45 "C no more. Remove from heat.
