Mediterranean style vegetable kaleidoscope

Ingredients

Eggplant 1 medium
Red pepper 1 medium
Bulb onions 1 medium
Fresh tomatoes (cut canned tomatoes) 3 large (1 tbsp.)
Cherry tomatoes and olives 10-15 pcs.
Pumpkin 250 - 300 g
Potatoes (zucchini) 3 pcs.
Mozzarella cheese (Adyghe) 100 g
Garlic 2 prongs
Salt, sugar taste
Italian Herb Blend or Dried Basil 1 tbsp. l.
Fresh parsley, fennel. 2-3 twigs
Ground black pepper Taste
Olive oil. 2-3 st. l.
Ground sweet paprika 1 tsp
Grilled sausages (spicy meatballs) 2 pcs. (10-15 pcs)

Cooking method

  • We make the fill.
  • - We clean large sweet tomatoes from the skin, add greens, garlic, paprika, salt (0.5 tsp), sugar (1 tsp) to them and grind in any way available to you. I shredded in a Kenwood kitchen processor.

  • In a thick-walled wide saucepan, fry the onion, chopped into half rings and thinly chopped red pepper for several minutes.

  • Add to the onions and peppers the eggplant, peeled from the skin in pieces and cut into large cubes or slices. Then, continuing to fry, stirring, add the sausages (or meatballs) cut into pieces, fry them, add the pumpkin and potatoes cut into cubes. We continue to fry for a few minutes, stirring occasionally. Salt, pepper and sprinkle with seasoning. Add cherry tomatoes.

  • Sprinkle with a spoon, distribute evenly and add salt. We try the sauce, if the tomatoes were sour, then sugar can be added.

  • A couple of minutes before the end of cooking, sprinkle with chopped parsley and spread (optional) a few pieces of mozzarella or Adyghe cheese.

Note

I came up with a recipe based on the availability of products. It occurred to me to make a separate fill, this solution seemed very successful.
The addition of olives will not hurt.
Adyghe cheese proved to be excellent in this recipe - it did not melt and absorbed the aromas of the sauce. (It reminded me of tofu in some way, or maybe for a reason .....)
I think you can completely do without meat additives and use tofu - you get a lean version.
I cooked at the Princess pizza maker. Seemed very convenient. At the end, five minutes before readiness, I had to add a little water.
